Three Farmers Camelina Oil

We've shared our fondness for Three Farmers camelina oil many times before. Produced in Saskatchewan, the oil has a taste all on its own, which in turn, makes simple recipes like these muffins taste more interesting.

As long as you have a bottle of camelina oil in your cupboard, this recipe is completely fool proof. So, to any fools out there, you can do this!

Morning Glory muffins

1 cup all-purpose flour
1 cup whole wheat flour
3/4 cup sugar
2 tsp baking soda
2 tsp ground cinnamon
1/4 tsp salt
1 large egg, beaten
1/2 cup Three Farmers camelina oil
1/2 cup unsweetened apple sauce
2 tsp vanilla
2 cups chopped apples, unpeeled
1/2 cup raisins
3/4 cup grated carrots
2 tbsp chopped pecans

Preheat oven to 350 F.

In a large bowl, combine both kinds of flour, sugar, baking soda, cinnamon, and salt.

In a separate bowl, combine egg, camelina oil, apple sauce, and vanilla. Stir in apples, raisins, and carrots.

Add dry mix to wet mix and loosely blend to moisten. Do not over mix. Some lumps are OK.

Spoon into lined or oiled muffin tins and sprinkle tops with pecans.

Bake for about 35 minutes, or until the muffins spring back when you lightly press on them.

Cool on wire rack.
