Spiked stovetop chai latte

Think you can only get chai lattes at a coffee or tea shop? Make it at home on those PJs or no-pants days.

Spiced Rum Chai Latte

Now that it's cooler outside, we're all about loving the chai, especially chai lattes. It's not always worth the hassle of bundling up during a blizzard and heading to a café just for a mug of aromatic liquid sustenance, so there is another way — a better way; an easier way; a stay-in-your-pajamas-all-day way.

This stovetop version of the seasonable drink is spiked appropriately to ensure that any and all shivers in your body are expelled. Begone, winter chills!

Spiked Stovetop Chai Latte

2 cups chai tea, strong brewed
3 cups 10% (half-and-half) cream
1/2 cup cane sugar
8 ounces spiced rum
2 green cardamom pods
1/2 tsp grated nutmeg
1/2 tsp ground cloves
1 stick cinnamon
cinnamon, ground, for garnish

Place the first 4 ingredients in a medium pot over medium-high heat, and heat to just before a simmer (steam starting to come off the surface).

Reduce heat to low, add remaining spices and aromatics, and steep for 20 minutes, stirring occasionally.

Ladle into mugs, garnish with ground cinnamon and sip away, preferably by a snowy window.
