Now that the weather is warming up, it's time to fire up the grills. And, do you know what goes together with grilled meats and vegetables like Jay-Z and Beyoncé? Romesco sauce! This version of the Spanish condiment sees sweet roasted bell peppers paired with the wholesome taste of almonds, with some chili flakes for a bit of spice. Feel free to experiment with other nuts like cashews or pine nuts, or add roasted and peeled tomatoes for your own version.

Try it on roasted scallions (like they do in Catalonia), zucchini, fish or lamb chops. Hell, just try it with everything!

Red Pepper and Almond Romesco Sauce

1 cup roasted almonds
1 roasted red pepper, skin and seeds removed
1 garlic clove
1 tbsp red wine vinegar
1 tbsp camelina oil
1 tsp chili flakes
1 tsp smoked paprika
salt and pepper, to taste

Place all ingredients in a blender and pulse until mixture becomes a chunky paste.

Season to taste with salt and pepper and pulse a few more times.

Transfer to a container and use as desired.

Will keep in the fridge for up to 10 days.
