Sometimes, the simplest recipes can be the most delicious. A jam tart is a classic dessert still found on many a Canadian table these days. If you haven't stolen one of these off of the counter when your mother or father wasn't looking, then you haven't lived. So, live vicariously through this recipe.

"Jam Tart was served for Christmas dinner in 1883 in Saskatoon's oldest house, then owned by Mr. and Mrs. Harry Trounce. The menu, preserved in a letter from Mrs. Trounce, included beef steak pie, boiled and roasted potatoes, mince pie, apple tart, blanc mange (a custard), currant biscuits and jam tart." - Amy Jo Ehman, writer and author of Out Of Old Saskatchewan Kitchens.

Jam Tart

2 cups jam
1 pastry one-crust pie

Preheat oven to 375 F.

Place pastry in pie plate and poke with a fork.

Spread jam evenly in pastry.

Bake for about 30 minutes, until pastry is lightly brown.

Cool completely before cutting.

Serve with whipped cream.
